I prefer to buy ancient grains as todays modern wheat is what give many issues with gluten intolerance, and gut issues. Ancient grains are what was once used worldwide, and hasn’t been ‘fiddled’ with in regards to making it more productive for commercial use. It is exactly what our bodies can digest and use without problems. I always store my flour in the freezer (flour is less tolerant than wheat berries, or whole wheat grains, and will turn rancid easier, so get whole wheat berries). AND store properly as explained here.
